Few well-laid plans play out according to the plan. Stuff happens, and you need to recognize that, not let it get you down and ultimately roll with the punches. Come up with the plan B or plan C or whatever. For example, people will be late, doors will be locked, you end with the wrong gear, batteries and lights die, and events don't play out as planned. That's just how it is in the video production world. So you frequently need to take a deep breath and come up with a new plan, unexpected developments came up to one degree or another in each of my three clients' locations. None were earth shattering, but I think they give you a sense of what can go wrong and how to react. At the bakery, my initial plan was to arrive at 6 a.m., two hours before the store opened and shoot till about 9 a.m. That would give me time to get there before sunrise and stay long enough to get several customers' reaction.
