By default, you select the Gradient tool, set the gradient type to freeform, and click inside a selected path or other object to set independent points of color. But you can also go up to the control panel and switch the draw option from points to lines, which allows you to connect points of color using the equivalent of the Curvature tool. You can draw outlines around objects, or even craft freeform radial gradients.
