Using the Scissors Select tool: GIMP Essential Training

Use of the Scissors Select tool in GIMP is demonstrated by Mike Rankin. This tool allows you to make selections by clicking to create a set of anchor points, also called control nodes, around the edge of the area you want to select. Adding and repositioning anchor points is shown, as well as use of the interactive boundary option, which shows the selection edge as you drag with the scissors select tool.
