Like most computer applications, iOS apps generally have some collection of preferences or settings to customize how they look and behave. Sometimes these settings are stored and controlled in the apps themselves, but sometimes they're controlled elsewhere. It really depends on the app, but you can easily find out which apps have external preference settings by going to Settings on your iPhone or iPod touch and in here, just scroll down towards the bottom of the screen. Below all the built-in system settings, you'll find the list of all the apps that use this location to store their preference settings.
Just tap anyone to access that app's settings. Again, not all apps store their preferences here, but if they're not here, they're in the app itself, so you shouldn't have any trouble finding them in one place or another.

Access exercise files from a button right under the course name.
Search within course videos and transcripts, and jump right to the results.
Remove icons showing you already watched videos if you want to start over.
Make the video wide, narrow, full-screen, or pop the player out of the page into its own window.
Click on text in the transcript to jump to that spot in the video. As the video plays, the relevant spot in the transcript will be highlighted.
