The movies you just watched represent merely an introduction to the larger concept of sharpening images. You might think of them as chapter one of what is ultimately an eight chapter series. No need to watch Chapter 1. The videos you just watched replace the old Chapter 1. Now the interface is 100% Photoshop CS3. The biggest difference for you CS4 users: Adjustment layers now appear inside of the Adjustments palette instead of a dialog box. Otherwise, it's all the same. Enjoy!
