If you decide that you want to create black and white video, or sepia tone video, the Black & White Adjustment layer is quite effective. I'm going to experiment here with this look just to show you what's possible. With the shot selected in the timeline, I can click the Black & White adjustments icon. This will come up, and by default, do a conversion. You'll find several presets that'll allow you to emphasize different areas to really get a unique conversion. However, the On Image tool is the key here to getting what you want. This allows you to click within the image, and separately control different areas for a better overall effect.
For example, by pulling down the greens here, I can make the grass really pop, and then playing with the reds, I could deal with some of the background elements and really help those stand out, so we're getting a better conversion. If I want a tint, just click this button here and you could assign an easy sepia tone or any other color that you want by simply using the standard color picker. That looks really good, however it doesn't fit the style of the story, so I'm just going to click the Delete icon to remove it from my project.
