At first glance it might not appear that you can control exposure and focus with your mobile phone. After all, there's really nothing on your screen that indicates you can do that. But in iOS if you tap and hold on location while you are composing a shot, you'll notice a quick little burst from the Focus target that indicates you are locking focus and exposure to that point. You'll also notice that the scene can change dramatically by doing this. When I ran across this cool fountain in the cafe that day, I was able to quickly change the look and mood of the shot simply by locking the exposure and focus to different locations around the fountain.
Notice as I move back to the table and tab to focus on the background, the shot gets darker and if I tap on the glass itself, the shot gets even darker, which is what I wanted for this particular shot. Once I'm happy with it, I snap the photo and move on to the next one. Once I've got my shots with the proper exposure and focus, I'm ready to take them all into Instagram for more processing.
