Text that's created with the Horizontal or Vertical Type tools in Photoshop Elements 7 is always editable as long as the Type layer is left in the document. You can change the text font, its font size, color or even the text content. Text is located on this separate layer in this file, which is phone3.psd from the 12_02_textedit folder in chapter 12. To edit this text, I need to select its layer and then go to the Toolbox and select the Type tool.
Then I can go up to the Font field, for example, and change the font. I could just press on the arrow to the right of the font field and choose a font from the menu but it is more efficient to do this. Click in that field and then press the Down arrow on your keyboard to cycle though the list of fonts with a live preview right here in your document until you see a font you like.
With the Type layer and the Type tool selected, you can change other items like the font size here or the font color here. You can add a style to the font from the Style field. Here, I'm adding a drop shadow. If you do not see a drop shadow in your Style menu, go to the double-pointed arrow and choose Drop Shadows and then click in the Options bar to dismiss that menu. You can even change the content of your text. To do that, just click inside the Type, drag over the word you want to change and type something else. When you are all done with your changes, go up to the Options bar and remember to click the green checkmark to commit your Type edits. You can come back and make further edits to you Type at any time, using the Type tool in Photoshop Elements.
